One thing we seem to agree on in the Great Meat Debate is that we need to consider the health, environmental and ethical implications of commercial meat production. Our desire for cheap meat has come at a cost, just not to the consumer.
Regenerative farming uses low impact traditional farming techniques to regenerate the soil and the environment. We source our regeneratively farmed meat from Devon based Eversfield Organic, choosing lesser used cuts to reduce food waste.

We realised on our first year of the pop-up that we had set ourselves quite a challenge in making this claim and opening at the end of winter. This is, therefore, the one rule that we sometimes bend to add some variety and colour.
Although we choose organic, seasonal and local produce most of the time, we will also break away from winter veg every so often. However some of our ingredients are homegrown from the Gedney allotment, so we hope that makes up for it!

A real food focus keeps our dishes free from additives such as emulsifiers and preservatives,. Although common in processed food, evidence is showing many are damaging to gut health.
We make all the health enhancing swaps. Things like using avocado and olive oil, instead of refined vegetable and seed oils, and gut health boosting bone broth instead of normal stock. Even finishing touches such as sprouted seeds or a fermented vegetable garnish are a delicious health addition.
